Cold Peanut Noodles is an easy and delicious dish that is incredibly versatile.

You can easily personalize your Cold Sesame Noodles:

  •  Spicy or mild
  • Vegetarian or Vegan
  • Protien-packed
  • Full of healthy vegetables

Ingredients

Pasta

One serving of pasta is about two ounces worth–if you don’t have a handy food scale, make a circle with your thumb and forefinger about the size of a quarter. The amount of spaghetti that fits in that opening is about two ounces woth. 

Peanut Butter

A tablespoon of creamy peanut butter is sufficient for one serving. You can also use other nut butters or tahini.

Garlic

One clove of garlic, grated with a microplane grater. A quarter teaspoon of powdered garlic can be substituted in a pinch.

Ginger

About a quarter inch piece of ginger with the skin scraped off, grated on a microplane grater. A quarter teaspoon of dried ginger will also work.

Soy Sauce

A Tablespoon of soy sauce. 

Lime Juice

The juice of a one lime. Don’t skip this one–it’s what gives the dish its bright and fresh flavor.

Broccoli

Half a cup of blanched broccoli florets.

Red Pepper

Half a cup of diced red peppers. 

Green Onions

Two thinly sliced green onions. 

Make It

Step 1:  Cook the Pasta

Bring a pot of salted water to the boil. Add the pasta, stir it around, and cook until al dente.

Step 2: Mix the Sauce

Mix the peanut butter, garlic, ginger, soy sauce, and lime juice until thoroughly combined. Taste it. Now is the time to decide if you need more of anything.  Once it tastes perfect, add a Tablespoon of hot water to thin it out so it will coat the other ingredients.

Step 3:  Add the Extras

Combine the cooked pasta, sauce, and vegetables. To really gild the lily, top with some sliced almonds. 

 

Hurry Up Hack

If you want to make the ahead of time, wait on Step 3–mix everything at the last minute so the noodles don’t absorb too much of the sauce and stay silky instead of sticky.

      • 1 quarter inch piece of fresh ginger
      • 1 Tablespoon of soy sauce
      • 1 lime, juiced
      • 1/2 cup of blanched broccoli florets
      • 1/2 cup of diced red bell pepper
      • 2 thinly sliced green onions
