Marinated Zucchini

Welcome to the Spiral Era!

The spiralizer, a tool for turning vegetable into long thin strips, has been around for a decade, but its popularity has exploded recently. A darling of the Keto crowd, a spiralizer gives the visual impact of pasta strands without the carb crash.

Zucchini is a particular favorite for spiralizing because of its pliable texture and neutral flavor, making it a versatile choice.

Marinated Zucchini is a simple yet delicious recipe that is quick to make and stores well.  Check out the bottom of the page for a Hurry Up Hack that makes it even more convenient! 

Ingredients

Zucchini

Olive Oil

Vinegar

3 cloves of fresh garlic, minced or grated with a micro plane grater

  • 1 teaspoon of kosher salt
  • half a teaspoon of black pepper
  • half a teaspoon red pepper flakes (more if you want to live on the wild side!)

A Tablespoon each of fresh basil, parsley, and chives.

Make It

Step 1:  Spiralize

Spiralize that zucchini!  I prefer thicker strands for this recipe, but if you like a daintier cut, go for it. Just be sure to cut the strands periodically, or they get unwieldy to eat. (That Lady & the Tramp scene looked cute, but you don’t want to deal with it in real life.)

Step 2: Make the Marinade

Combine all the ingredients except for the zucchini into a container with a secure top and shake like crazy until everything is well incorporated.

Step 3:  Mix It Up

Give everything a toss and eat immediately or store in the fridge. This dish has the benefit of maintaining its flavor and texture even after sitting for a day or two.

 

Hurry Up Hack

Making your marinade is quick and easy. But some days, even that takes more time or effort than you want to expend. No worries–use your favorite bottled oil & vinegar based dressing, and your Marinated Zucchini will still taste amazing!
