Chicken Stock

Overview

Slow Down

Chicken stock is similar to chicken broth, but they aren’t twins. Stock is made with bones, so it usually has a deeper flavor. Broth is made with meat only, so although it’s still tasty, stock is better for soups and sauces. 

It may seem daunting to make your own stock, but by using one simple tool, it’s effortless. That tool?  The slow cooker, of course. A slow cooker lets you work culinary magic with almost no work at all.

Ingredients

Chicken

Half a dozen chicken wings or drumsticks–if you have the bones from a roasted (or rotisserie) chicken, that works too.

Onions

One big or two small onions. Don’t bother to peel them; just cut in half.

Carrots

Two or three carrots, scrubbed. Don’t bother peeling, but if they’re extra long, break them in half.

Celery

Two ribs of celery. Be sure to wash any dirt off, and snap them in half to fit better. 

Garlic

A head of garlic, cut in half.

Pepper

A teaspoon of whole black peppercorns. I never salt my chicken stock, because I want to determine the amount of salt in the final product. 

Make It

Step 1:  Assemble Ingredients

Put all your prepped ingredients into the slow cooker. 

Step 2: Let It Go

Pour enough water to cover all the ingredients, to the max fill line. Yes, some of the ingredients will float, but that’s fine. Put the lid on, set it to Low, and go to work. Or to bed. Or whatever, but leave it alone for 12 hours.

Step 3:  Strain and Savor

Once your stock has finished, turn off the slow cooker and set a fine mesh sieve over a large bowl. Use a measuring cup or teacup to scoop out the liquid and pour through the sieve. Transfer to storage containers (I love these.) 

Use your delicious stock to make any number of soups and sauces, or just enjoy as is!

 

Hurry Up Hack

Don’t want to wait for your stock? Instead of a slow cooker, use its speedy cousin, the Instant Pot! Under high pressure, it will generally take less than an hour, but check the instructions on your particular model.
